The selection and harvesting of the grapes is done strictly by hand, in crates that are left to rest overnight in a cold room at 4°C. The pressing follows the rigorous guidelines of the French principle; soft and in whole bunches. The alcoholic fermentation in steel at a controlled temperature is followed by malolactic fermentation, to give sweetness and creaminess.
