The selection and harvesting of the grapes takes place strictly by hand, in boxes which are left to rest overnight in a cold room at 4°C. Pressing follows the strict guidelines of the French principle; soft and in whole bunches. The alcoholic fermentation in steel at a controlled temperature is followed by malolactic fermentation, to impart sweetness and creaminess.
The elevation continues for another seven months, in view of the tirage. It has a bright gold colour, in synergy with a fine, decisive, slow and constant rising perlage. The olfactory spectrum passes through strong citrus and lactate notes, on a light mineral background. The mouth offers elegance, creaminess and great acidic energy.
